What is your name and the name of your business?
Melissa Meyer, Owner and Pastry Chef at Chefin
Tell us about your company and how it became.
Chefin is a dessert catering company that specializes in providing Wedding Cakes, Dessert Favors, and creating elaborately themed Custom Dessert Tables to the Tampa Bay area.
Chefin is a local business that has been years in the making. I am a Certified Pastry Chef who’s always had a passion for special events, and specifically weddings. After graduating Culinary School, I developed my skills working for The Walt Disney Company making desserts, managing restaurant operations, and special events. After moving to Tampa I began teaching Baking and Pastry courses at The Art Institute, helping pass my passion along to future chefs. However, I still had a deep desire to offer my dessert works-of-art to couples celebrating the best day of their lives. And thus, Chefin was officially born. I love to create the sweetest part of a couple’s wedding day.
How would you describe your product/service design style?
I am a very creative person and love to incorporate my client’s personality into my products whenever possible.
I like to showcase design techniques that I have developed throughout the years and present desserts as if they were part of a plated presentation at a fine dining restaurant. For example, our S’mores don’t look like something you’d make over the campfire. Instead, they look like a fresh, fluffy marshmallow piped onto an open-faced, homemade graham cracker tart; toasted and drizzled with a rich ganache. Maybe the marshmallow is flavored with orange Grand Marnier, maybe raspberry Chambord…that’s where the client’s dreams meet ours and we work together to create desserts and wedding cakes they only knew existed in their dreams.
What makes your product/service different than your competitors?
I am a Certified Pastry Chef so I take great pride in making all our items from scratch. This has also provided me with the skill to be able to produce a wide variety of flavor and design combinations to meet the couple’s personality and desires. While we do offer traditional flavors, I’ve also developed flavor combinations that people adore but may not have thought of on their own, like our Tequila Mango or Almond Joy wedding cakes.
Any upcoming excitement for your company?
We just had one of our 2-tiered traditional wedding cakes featured on The Knot! Also, next month we are producing a wedding cake for Ybor City’s Coppertail Brewery to use to market their new event space.
What is your favorite part of the wedding planning process?
The excitement! I know things can seem stressful in the middle of planning such a fantastic occasion, but I tell everyone how much I missed the wedding planning process once it was all over. Enjoy every second of it!
What are some trends that you are seeing this year?
Metallic toned wedding cakes are extremely popular (and oh, so chic)! This is a trend that I adore and there are so many great ways to incorporate metallic tones utilizing edible gold or silver. Yes, you can serve your guests real gold that they can eat! Talk about luxury!
What is one overall piece of advice you would give to brides?
When trying to decide what design you envision for your wedding cake, it is helpful to browse through pictures on Pinterest and share your “Cake Dreams” board with your cake designer. However, when you’re collecting your pictures it is even more helpful to identify specifically which elements of the picture you adore. That way, the cake designer can work with you to create a masterpiece that incorporates those elements while still creating a unique work of art just for you.
